Ancient Grains

Ancient grains are viewed as less manufactured than modern cereal grains, and have been consumed for thousands of years. These grains often have better nutritional value than modern grains, and are easily digested:

Pulses are quickly becoming recognized in the food industry as superfoods. Long a stable food in vegetarian and ethnic diets, more food scientists and consumers are turning to pulses for other health benefits. Precooked whole and bumped pulses require no pre-soaking and will cook in 1/3 the time required to cook raw pulses. Pulses are also gluten free, and a great thickening agent.
